1 cup rice
2 cups water
1 can diced tomatoes
1 can diced tomatoes with chiles
1 can beans (pinto, red, kidney, etc)
Bring the rice and water to a boil. When the level of the water reaches the rice, add tomatoes and beans. Bring back to a boil and cook for 10 minutes stirring occasionally. Turn off heat, cover and let stand for 30 minutes.
This complete one-pot meal is great with a salad or topped with some salsa and a little cheese. We eat it a couple of times a week and it makes 4 servings. The bonus besides fiber from the beans and tomatoes is that beans and rice make a complete protein. By the way, if you compare fiber content of both white and brown rice, you'll find that they're pretty much the same.
